Brouwerij 3 Fonteinen is committed to shaping a (re)new(ed) and sustainable model for (local) agriculture. The first success of our Pajot Cereal Network is entirely based on a strong community of passionate farmers, a close cooperation around a shared cultivation rotation, exchange of expertise and experience and – above all – a fair price. Because the real value and the terroir of lambik and geuze is not bound to the air; it starts on the land and in the ground. By returning to the roots of lambik tradition – a lot of lambik breweries were a part of farms – we would like to keep the relevance in “real” lambik for the long run. At the same time, we can bring the much-needed resilience into Pajot agriculture by involving all people in a short and valuable chain. From land to lambik, from grain tot geuze, from farm to fruit lambik, from barn to bottle; we are firm believers! The rest of Belgium will then follow..
